we made some pulled pork in the crock pot. Along with some baby carrots, added some home made coleslaw & cold steamed baby potatoes. It is hard to beat slow cooked pork yum yum
we had pork from the crockpot, made it into pulled pork. With cp carrots, steamed cold, baby potatoes & some fresh home made slaw, yum, it is hard to beat slow cooked pork.
Bought some boneless center cut pork chops from Hannaford, on sale (they ended up being about 75 cents each, I think!). I must admit that usually with pork chops I just use Shake & Bake (or a similar coating) and cook them in the oven ... but I wanted to try something new and cook them on the stove top. So I googled and one of the first hits was this: Pan Grilled Pork Chops Recipe - Food.com . It sounded good and had great reviews so I figured I'd try it.
It turned out great (I used my new cast iron pan -- still getting used to it). For seasoning I kept it simple and just used thyme and black pepper (no salt, I almost never cook with it). I stir-fried veggies too (carrots, green beans, onions, mushrooms) ...
I modified the cooking time for the pork, just in case: I did about 3 minutes per side, then 6 minutes covered off the heat. This method worked great -- the pork chop was really tender -- not dried out at all. YUM!
Made goulash for someone on our food train at church and have just enough left over for our dinner. I will do a green salad as well. I have just about enough cherry tomatoes from the garden to use in the salad, have been getting about 1/2 dozen a day.
Planning to make chicken and vegetable stir fry with a bit of rice aside. To drink lemon water,buttermilk or apple juice with Perrier water. For dessert watermelon.
I know this is not the right forum area for this news but I since I enjoy posting here more than any other area, I will tell you why my husband and I are celebrating with T-bones and champagne tonight! I think I've mentioned here that I am an engineer and a patent agent for a large law firm that transferred me to Washington from California. I have a J.D. but I don't have a traditional practice. Anyway, I was made a partner at my firm (I brought in a lot of new South American business), so all of the traveling and late nights, etc. finally paid off!
The other night we had a rotisserie chicken from the supermarket. Tonight: use the leftovers to make pulled chicken sandwiches.
