We are going to be out a good part of the day and I got a gift card to our favorite Mexican restaurant for moms day, so think we will have lunch out with left over Mexican for dinner. I might have to add a taco or two for spoiled brat.
It is going to be a very hot day day here over 30 C ( a mini 2 day heatwave) so I am preparing a light summer meal.
For tonight spiced Matzo crisp with a mixed salad and to drink lemon water. No dessert,if they want they can pick a fruit ready to eat.
Spiced Matzo crisp brushed with olive oil and sprinkled with cumin /garlic powder,sea salt/black pepper. Bake in oven temperature of 400 F for 8 minutes.

4 Belgium endives
1/8 cup of fresh mint leaves
1 diced English cucumber
1/4 cup flat leaf parsley
1 cup halved cherry tomatoes
1 cup arugula
juice from 1 lemon
4 tbsp olive oil
2-3 minced garlic cloves
sea salt /black pepper for taste
