I will be roasting a leg of lamb with a garlic, rosemary, parsley, thyme, lemon zest past rubbed all over it; asparagus spears (like eating springtime) and mint basil infused basmatic rice. A few deviled eggs to start will expand the Easter theme.

So who else is stuffed?

I had ham, pineapple, mashed potatoes and gravy, roasted root vegetables, green salad, pea salad, deviled eggs, jalapeno poppers and bread pudding.

We are still waiting and will eat around 830 Eastern time.....lamb, rice, asparagus. We knashed on deviled eggs a bit ago, to tide us over.

It really was delicious....plenty of medium for me and med. rare for DP. The mint from a neighbors garden with my basi was just delicious in the balsamic rice and asparagus..in lemon butter sauce (even slightly over cooked) was perfect!

Lasagna from a double batch (made and frozen two months ago) came out fabulously!
We added some fresh, roasted hot Italian sausages and a lovely, light cucumber and scallion salad.

Edy's ice cream with M&M's for desert a few hours later.

Life is good.

We had Jazz Brunch. On my plate: a jambalaya omelet, bacon, yeast biscuits, berry compote, mixed melon, and my favorite, Mimosa's.
