Leftovers.
Ex theres some cold stuffing (it has celery onion cranberries and toasted pecans and walnuts in it) next to the turkey carcass I have in the fridge- LUNCH is solved.

Maybe even just scoop a couple bites while putting my coat on (in a rush to get out and do errands )

This being the holidays, I also have a half plate of cheese assortment slices and tons of whole grain crackers and a bowl of precut fruit-
add in some hummus to dip in- thats a pretty easy lunch too-

or if working in the cold and you need a quick hot bite-

minute ramen noodles - add chopped veggies - like cilantro, spinach, peas, corn -before you pour in the boiling water, to healthy it up....

Quickest lunch though- is a handful of the Omega-3 mix I bought as a salad topper-

(its a mix of nuts, dried cranberries, and pumpkin seeds)-

My routine lunch is low fat Plain Yogurt w/ fruit. Sometimes, I cut up a banana or blueberries or blackberries or whatever else you might want to add.

I get mine in the bulk food aisle of my local Winco. It is cheaper than buying in jars. Try a little and see how you like it.
