Today for me, one of the chicken thighs I baked on Thursday night so I didn't have to freeze them ... had it with a bunch of veggies, of course ... here they are sizzling in the pan (can you hear them? ) ...



And here they are on my plate with the chicken. I wish I had avocado but to have it every day would mean I would have to go to the grocery store more than once every couple of weeks, and that does not sound like fun.



I used Tone's rosemary-garlic seasoning on the chicken mixed with some Weber's garlic-herb seasoning. The chicken was delicious (even without the skin!), and the veggies yummy as always.

That night I just used Morningstar Farms Maple Breakfast Patties, available at Target. They are good and easy to find. There are some better brands that I have delivered or I buy when I go to Cleveland, Akron or Canton.

Morningstar original is good too. Q'uorn isn't a bad option.

Pan seared Wild Atlantic Sea Scallops cooked in a tiny bit of butter and eevoo, white wine and herbs, mashed potatoes with chives and light sour cream, salad with butter lettuce, baby peas and shallot vinaigrette.

Instant Pot Chili con Carne using marinated and apple smoked soy curls in place of the Carne, along with a garden salad, freshly baked cornbread and a glass of merlot.

Took my leftover steak sandwich [that was skimpy on the steak portion], re-toasted bread and then added some grilled Steak'Ums with sliced provolone. Sweet Baby Ray's honey chipotle. To drink: small glass of moscato.

When we were at the grocery store, I saw this slice of tiramisu cake and couldn't resist. I think it was calling my name. Split with Mr C for our dessert and a cup of hot peppermint tea.


If I ever see Black Forest cake, I'm getting it as it's too long a drive to Canada

I made three disposable aluminum pans of shepherds pie. I’ll freeze two of them. I prefer to use lamb but this one started as a couple of large sweet onions, garlic, thyme, and four pounds of hamburger. I use carrot and baby peas. The flavor hit comes from More Than Gourmet demi glace stock base, red wine, a bit of Worcestershire sauce, and a bunch of port. I add a bunch of fresh ground black pepper at the end so it has some heat. It’s better with a lamb stew base with the same ingredients.

Thanksgiving Dinner at church. While there was loads of assorted side dishes, I kept my plate reasonable with Turkey, Dressing, Cranberry Salad, and Sweet Potato Casserole (Ruth Chris Recipe). Then I blew it with a piece of Jam Cake and a slice of Coconut Cream Pie (my personal favorite).
