I asked what sounded good to DH, and he wanted the lasagna that is in the freezer.

But what we will actually have is grapefruit and fennel salad, and something to do with tofu (it was expiring).

You can imagine the look I got.

Tomorrow is Christmas Eve so today last cooked dinner.
Stuffed sweet bell peppers with onion, tomato, beef , herbs.
Steamed endive.
Potato baked.

DH is cooking Cajun smothered chicken and andouille tonight. I’ll probably help him with sides once he’s done in our very small kitchen.

Grazing. I made a very fattening spinach artichoke dip with tortilla chips and carrot sticks. Chocolate brownie cookies. A small baked potato with sour cream and lots of black pepper.

My stomach is taking this holiday season very seriously!

Um, I think we all know what would win!! (I mean, seriously, I already had dinner planned but you had ME craving lasagna!)

Tonight I made Hunan beef for I think the 3rd time. Here it is cooking ... don't the veggies look beautiful? I used carrots, onions, red bell pepper, celery, broccoli, mushrooms, and water chestnuts (couldn't find the can of baby corn that I could have SWORN I had!) ...



Used flat iron steak instead of flank steak, as that is what I had. It was quite tasty but I STILL don't have the sauce quite right -- a bit too much vinegar, I think (next time I will use 1 tsp. instead of the 2 that the recipe calls for). But with plain old instant white rice, it was still quite delicious ...



Not a traditional holiday meal, but still good, and I have enough left over for another 2 meals.


In case I miss you, for those of you who celebrate Christmas, HAVE A WONDERFUL MERRY CHRISTMAS! And to all, I just wish you peace and joy this holiday season ... and may we all have an AMAZING 2021.
