Grilled Beyond Meat Burgers on toasted, thin, whole grain rolls with lettuce and tomato and red onion. Home made angel hair coleslaw. Half a baked sweet potato topped with Greek yogurt, curry apricot dressing.

I had a chicken thigh and a small green salad with a lot of vegetables because I happen to have a lot of fresh vegetables in the house this week. (!)

tonight is my go to stand by lol: spaghetti with tomato sauce/paste simmered with zucchini, green pepper, mushooms, red lentils in it and vegetarian Parmesan

For us it will be a small pork loin with rice, a green salad and brussel sprouts. I got a small loin a couple of weeks ago and it was so good I went back and got another one. This one has a butter/herb marinade. The last one had a different marinade. I think I should probably go back and grab a few more. I just cook one in the insta pot for a short time: juicy, moist and tasty.
