Last night was a grilled pork chop and green beans from Texas Roadhouse - met my mother. Tonight will likely be either some grilled chicken I got at Sam's Club or coconut shrimp and salad.

Alm, that sounds SO GOOD! I was planning to make a curry this coming Friday but maybe I will try to do chicken tandoori instead ... now if only I had a tandoor oven ...

Tonight I had the 2nd portion of salmon (leaving some for my breakfast scramble the next few days) ...
In addition to the veggies, I remembered the avocado this time!! I kept the salmon simple and just went with my old favorite, Thai sweet chili sauce. Everything was delicious.
Korean Beef Bulgogi with garlic chili sauce, collard greens over Japanese noodles. One of my favorite meals!
