I cooked a large pork shoulder in the crockpot yesterday -- just a little maple barbecue sauce and some Morton's Season All. It turned out really well so I froze a lot of it but will have some tonight with a baked Yukon Gold potato (butter and sour cream) and some chopped salad. I have half a can of fruit cocktail for dessert -- maybe one almond shortbread cookie to accompany it -- and a glass of white wine. I eat whatever I want -- just use portion control and no seconds.
Tonight we had ribs and fried vegetable rice. While shopping last weekend I ran across honey nut squash. I have never tried or even heard it before. We cooked it up tonight. It is really tasty. It might be my new favorite squash!
My chili turned into semi loaded nachos, meaning it was the chili I made, tortilla chips, shredded cheddar and layered in a baking pan and baked until the cheese on top was golden brown. Served with Sour cream on the side. I hate refried beans, and did not have guacamole or jalapenos but I would have left off the jalapenos because I don't care for them.
