Tonight we are having short ribs over rice and gravy, broccoli casserole, dinner rolls and an iced blueberry loaf cake.

I cooked a large pork shoulder in the crockpot yesterday -- just a little maple barbecue sauce and some Morton's Season All. It turned out really well so I froze a lot of it but will have some tonight with a baked Yukon Gold potato (butter and sour cream) and some chopped salad. I have half a can of fruit cocktail for dessert -- maybe one almond shortbread cookie to accompany it -- and a glass of white wine. I eat whatever I want -- just use portion control and no seconds.

Tonight for dinner I am making scallops and angel hair in a white wine lemon sauce. I also am making a balsamic roasted beets salad.

That sounds divine. I’ve been missing my scallops, they are very expensive here.

Tonight I wanted a big salad, DH wanted brisket (from the freezer) and sausage and Bush’s beans. So we’re having a little of all of it.

My chili turned into semi loaded nachos, meaning it was the chili I made, tortilla chips, shredded cheddar and layered in a baking pan and baked until the cheese on top was golden brown. Served with Sour cream on the side. I hate refried beans, and did not have guacamole or jalapenos but I would have left off the jalapenos because I don't care for them.
