Tonight's dinner was a veganized version of Mexican Albondigas soup. Loaded with carrots, butternut squash, onions, garlic, tomatoes, napa cabbage, cilantro, and vegan sausage and Impossible burger for the meatballs. It was over the top good! Served with a mixed saladand some crusty whole grain bread. And a bottle of Norton wine from Southern Illinois to drink. Muy Bueno!
