Last night we had Chinese food. We both had chicken with Cashew nuts. Going out to dinner with friends tonight and they want Chinese! That's ok we have never been to this sit down place and they want us to try it. Usually we go to a diner but I guess they are tired of that. I am usually very picky where I get my Chinese food from and only like 2 places nearby our house but I'll give it a whirl.

Tonight - a spinach strawberry salad and stuffed spaghetti squash with Italian sausage and arrabiata sauce. I decided to cook the rest of the bag of spinach and on a whim made a spinach artichoke casserole. Remains to be seen if we will eat it tonight or tomorrow.

Had some leftovers spicy chicken bits, added bell pepper, tomatoes, spinach and eggs. Garnished with green onions.
