Tonight I had a taste for a comfort meal. We are having Hungarian pork chops (using Carney Wilson's recipe) mashed potatoes, corn-on-the cob, garlic knots, and blackberry cobbler for dessert.

Sausage & Peppers over rice❗️Used the spicy plant based sausage this time and they were better than expected.

My daughter in law gave us some meat from her Uncle’s ranch in Kansas. I had some cube steaks and decided to try my hand at chicken fried steak but I put them in the sous vide for 24 hours before dredging and frying. They were ok - tender but not as tasty as a restaurant. I can’t for the life of me figure out how they get those nice fluffy flour crusts on them. Of course we had mashed potatoes and gravy too along with broccoli. Last of the sugar free homemade vanilla ice cream for dessert.

Tonight salmon Wellington https://www.tastingtable.com/680443/...ington-recipe/ served with steamed green beans (lemon juice, lemon zest, olive oil, salt and black pepper) and to drink a glass of local Ontario white wine.
For dessert later under our Maple tree while listening to natures symphony my chilled creamed cottage cheese cake served with fresh made raspberry sauce and a cup of ice coffee.

My creamed cottage cheese cake...
Put 1 or 2% cottage cheese in a strainer covered overnight in the fridge and next morning blend it in the food processor until creamy

500 g cottage cheese container
3 eggs
3 Tbsp. semolina
150 gram sugar or less
knife tip of baking powder
1 lemon (rind and juice) the zestier the more flavorful
125 gram room temperature butter
Everything in a bowl,mix well with electric hand mixer and if you like add some golden raisins.
Bake in a springform for 70 to 90 minutes pending on your oven until golden brown. Cool cake,transfer and refrigerate. Freezes very well too!

*I like to serve this refreshing chilled cheese cake with berry sauces
*You can double this recipe easily
