Good evening all!

My mom brought some leftover spaghetti over. I tossed them into a pan with a wee bit of oil, added a few onion cubes, and 4 shredded slices of salami.
After frying this for a bit, I poured 5 table spoons of cream over it all, added curry, garlic powder and a lot of basil. DS loved it altho' I didn't think about adding some cheese lol

Have a great evening!

Hi, per request...... Goat Cheese & Sundried Tomato Chicken Breasts. This recipe serves 6

6 boneless chicken breasts
1 cup of goat cheese
1 tsp. dried Italian herbs
1 tsp. minced fresh Italian parsley
salt & pepper
1/2 cup heavy cream
4 cloves minced garlic
4 T olive oil

Combine goat cheese, herbs, and salt and pepper. Make slit down the side of each chicken breast creating a pocket. Spoon a layer of goat cheese mixture inside each chicken breast. Season chicken breasts on both sides with salt and pepper. Using saute' pan on med/high heat, layer bottom with olive oil and place chicken breasts facing up in pan until browned. Turn over and brown the other side then heat until fully cooked. Remove chicken breasts. Add minced garlic, sundried tomatoes and heavy cream to the pan. Add salt and pepper, and scape all bits off the bottom of the pan. Bring to a boil then simmer for 5 minutes. Spoon sauce over the chicken.

Enjoy!

Hey everyone, sorry I have been awol for a few days. A cousin got married over the weekend and yesterday I got to run my favorite aunt all over town. So happy to see her. I only get to visit with her once every couple of years.

Dinner saturday was a wonderful steak at the reception. Yesterday's meal was bbq chicken with baked potatos and brussel sprouts. YUM!

Tonight is going to be leftover pizza. Simple and easy.

Hope everyone had a great weekend and look forward to a great week ahead!

I finally got a charcoal grill a few weeks ago and have been cooking everything that I can on it. I just love the flavor over a gas grill and it has been years since we had one. Tonight will be hamburgers with melted blue cheese and I think a green salad.
Pouring rain so no charcoal tonight , that's okay because we need the rain really bad!

I'm making pork chops in the crock pot tomorrow. They'll have curry powder, blackberry jam, and horseradish. Some other stuff too. Sounds weird but tastes great. Let me know if you want all the ingredients!
Hum that pork chop crock pot meal sound good. A little sweet sour?

too late for the crock pot now but I will keep that in mind for the next time.

Going for the breading and baking tonight.
