I think you need a nice slice of coconut cream pie or a chocolate brownie with ice cream and hot fudge to go with your half of the "Italian Sandwich".

I would like that but not sure I could look the doc in the eye when he asks how I had been eating later in the month. Dessert is now about twice a week and getting to be more fresh fruit. Coconut cream pie is about every other to every third week now wife makes one up. I've cut way back. I saw cans if tuna packed in water in the kitchen. A sign of things to come.

Good Afternoon Foodie Friends!

"furry child" & I just climbed out of our closet. Tornado watch until 12:45 EST, 50-60 mi. winds, violent thunder & lightening, it is moving NW now. All of you please be safe.

Dinner last night turned out wonderful. I Panko breaded boneless chicken cutlets, baked them in the oven until golden. Steamed asparagus, sliced tomatoes and spring salad with blue cheese dressing for h & exoo & fresh lemon for me.

Now that I have my kitchen without storms, I a going to make Pasta Fagoli gravy, and make up Pasta Fagoli for myself for a late lunch. h on the wacky shift today, so he will be getting leftover grilled Halibut, wild rice, zucchini, red bell peppers, garlic & onion.

I will make myself some kind of leftover for dinner tonight.

I will check back later, I hope everyone has a great afternoon. kelsie

We normally make tuna salad with low fat mayo and dab of relish and chopped onions and then stuff a tomato. This year I'll have some jalapeno relish in mine. We will have to work on some other seasonings to keep it from getting boring.

Oh Kelsie glad it missed you. Is that normal for NC?

Forgot I have fresh aspargus so that will go along with the hunk of black angus.

Need any help carving Lacey......Just kidding. Fridge, freezer, and cupboards full and I don't care what is for dinner. I'm easy to please these days. Right now a small piece of chocolate seems to go a long way. I think a sale on hot dogs is what I need to find. Something I can safely nuke for lunch and dinner.

What do you do with the asparagus? Something special?

MM I just toss with olive oil, lemon pepper, lemon juice and roast for 25 min at 350 deg. Little shaved parmesean cheese before serving.
