I have Mongolian Beef in the crockpot. I'll serve it with rice. I'm thinking about a pumpkin spice cake for dessert, but I may lose my motivation by the time I make it back home.

Italian sausage grilled enough to get some flavor, then mixed with onions, peppers, mushrooms in a light tomato sauce and freshly grated parmesan over bow-ties, toasty Italian bread...

I actually had something else. Chicken was already pretty thawed, so no sense in leaving it in the refrigerator for another day

Cooked it with Ragu and onions, and mixed in a pot of Spanish rice (2.5 servings worth, according to the package). I think I ate more than half of it though
