I'm not sure what I'm going to make, but I have 2 pounds of carnitas thawing in the sink, a package of corn tortillas, and sour cream. Maybe enchiladas, maybe tacos. Whatever it is, it's sure to be delicious!!!
Zesty pork tenderloin (marinade of ketchup,hoison sauce,garlic,sugar and dry white wine)
Brown rice with onions,mushrooms and soy sauce
Oven roasted yellow squash and zucchini with olive oil and splash balsamic vinegar
Lentil soup. I had about a cup of lentils and some leftover ham. I started with some onion, garlic, celery and carrots sauted in olive oil. Then I dumped in a can of tomato sauce, some beef broth and water, the lentils and ham, and a little thyme, salt & pepper. After about an hour, I added some chopped fresh Italian parsley and a handful of rigatoni.
It is really good.
