Clearing out the freezer, found cream-cheese-stuffed-jalapenos and some potato rosti (from IKEA!!!), so wrapped the jalapenos in bacon, baked them with the rosti and served them up on a bed of rocket and a poached egg on top!

"Brinner". I love how some of us are using things we bought for Christmas and didn't cook! Pancakes and this yummy topping. I had a can of Bing cherries for a Jello Christmas salad that was nixed at the last minute. Emptied the can of cherries, juice and all, into a saucepan and added a little ground ginger and vanilla. I let that simmer a bit and then thickened the cherry mixture with some cornstarch. The pancakes were delicious topped with this. Some link sausage completed dinner. Yum!
