Clean out the fridge chicken tonite--chunks of chicken breast, crimini, shallot, garlic, red bell pepper, roma tomatoes, red pepper flake, all in a quick pan sauce of wine, stock, butter with oil-cured black olives on top. Full belly and reasonably clean fridge.

Pretty simple...Hubby brought home store potato salad, I added hard-boiled egg, diced celery, onion, and red & green bell peppers, and some chopped "dill pickles", (couldn't resist )...There was more stuff than potatoes

Tonight is going to be some leftover beef with au jus turned to gravy, atop some sourdough bread and mashed potatoes, with veggie left up to kiddo (I have learned to limit her choices )...

A Digiorno 200-calorie cheese pizza (it's thin crust, rectangular, about 8x3 inches...a good "single portion" size) topped with fresh red bell pepper, green olives, and red onions.

A brat on a bun with these extras:

sauerkraut, pickle relish, mustard, ketchup.

I also enjoyed a funnel cake, and some curly french fries.

Last nights left overs.....salisbury steak with mashed potatos and gravy. Except tonight I sort of made it into a hot sandwich and served it over two pieces of bread.
