I threw a bunch of potatoes, carrots, onions and poblano peppers into a covered roasting pan with a chunk of pork, lots of garlic and black pepper. 90 minutes in the oven. Enough leftovers for several days, and it'll be better tomorrow.
Tried another variety of Hamburger Helper, scalloped potato or something like that, my daughter didn't care for it and I didn't even try it! Watermelon for desert.
I did the grocery shopping today and while at Wal-Mart I got some General Tsoes chicken at the deli. I came home and made some rice and green beans while I put the groceries away. A day at Wal-Mart with 2 kids always wears me out.
