Have to beat the heat - another day of 102F here. Probably a home made bowl of tossed salad. Don't know exactly what ... have to go shopping first

This is the basic recipe. I sometimes add other chopped veggies and/or mushrooms. I almost always make it with ground turkey.

Stuffed Cabbage Casserole
1 lb. 93% lean ground beef (or ground turkey)
1/2 cup instant brown rice
1 8oz.can tomato sauce
1 14oz can diced tomatoes
1/4 cup water
4 cups shredded cabbage or cole slaw mix (in the bag already shredded)
1 large onion, chopped
1 clove garlic, minced
salt and pepper to taste
shredded cheese to taste

Preheat the oven to 400 degrees.

Brown the ground meat and chopped onion,garlic. Drain. In a large bowl, mix everything else and then add the meat. Pour into an sprayed casserole dish, cover and bake for 30-40 minutes. Sprinkle on shredded cheese and continue baking until cheese is melted.

Salad of greens, red and yellow bell peppers, cucumber, tomato, celery and mandarin orange sections. Dressing is my usual - olive oil, few drops of sesame oil and rice vinegar. And gee - tonight I might get crazy and put in a dash of sugar to make it sweet-sour. Talk about living on the edge! Woo-hoo!

Plus a cup of the chicken orzo soup I made earlier today.

Last night's red velvet chicken got delayed until tonight. It was very good. The aroma of it cooking was oh so good. Smells like brownies baking. Had green beans with potato chunks and a salad with it.

Burger on the grill on a toasty hard roll, skewered onions, red peppers and baby bellas, with some rice and a romaine salad with sliced tomatoes and red onion....
