I think most of us on C-D know Hispanic is not really consider a race. The funny thing is a lot of Hispanics or Latinos in the US either don't know there identity or try to downplay it. I did census work this year and interviewed a few Mexicans that did not turn their letter in on time. When it came to race question, all of them claim Latino, Hispanic, or Mexican as their race. Even the Mexican lady whom looked Mediterranean could've identified as white, yet proclaimed latino/Mexican as her race. One family was obviously Native American or indigenous, but they claim Latino as their identity.
When it comes down to it, we are told that race is a social construct. Hispanic or Latino can be a useful concept for those of Latin American origins that can't neatly fit into one of the three racial categories on the US census.

But isn't Latino an identity in itself? Yes, she may look indigenous, but if she grew up in a Mexican(or any other country) shouldn't it be her priority to choose whatever she feels comfortable with? She could look white as snow, but may have also grown up in a Mexican household. So she should choose Latino as her ethnic background. And you should know that there's a lot more to consider than just looks when figuring out someone's racial make up.
