I'm late to the party here but in the US your best options are:
1. San Luis Obispo, California - small college town that ticks all of your boxes. Lot's of fantastic nature close by
2. Santa Cruz, California - The town itself is rather foggy but a bit inland you can get more of the sun you need
3. Monterey, California - less liberal and also here you need to go inland to get less fog but otherwise a great fit.
I'd suggest Kauai. My family lives in Poipu- which is pretty rural, and quite liberal. Princeville and Lihue would also fit the criteria (Lihue is less rural though, but compared to Ashville or others listed it is much more so). All of Kauai is fairly liberal- however, much of the population is more akin to union workers liberal (a few natives are quite socially conservative); most of the non Polynesian folks (Chinese, Caucasian, and Japanese) are more progressive types though (these are blanket generalizations though and not true for everything).
It is a humid and tropical climate. The island is a bit expensive and lacks amenities, but it is quite beautiful.
Despite nashville being called the “it city”, I’m ready to move. Cloudy often, conservatives are much more common than liberals, Poor public schools, uneducated population, high crime, poverty, terrible drivers.
El Paso has low crime, democratic voting patterns, lots of sunshine year round. Rio Grande Valley has nice weather and not too crowded. The crime may be higher though.
When you add it all up There is no place to go. Areas where someone would fit it better, are way over priced. So they have to keep lowering and lowering their criteria and comfort level, so they can afford to live someplace USA. Which is usually completely lacking in what they want in a place to live. Doesn't seem like much of a home does it the USA.
Would say Gainesville, Florida...has Payne's Prairie south of it where people see wild buffalos, Ickenetchee Springs for water tubing, Devil's Millhopper. Very liberal, at least for Florida and views are not forced on you, but still liberal. Their farmers market downtown is wonderful. Used to see old hippies there in the 1990s happily dancing.
There is a Whole Foods. If you go to the Volta Coffee Shop facebook page, you will see a lot of a creative food dishes. There are some healthy vegan restaurants also that are fun to visit.
Now, with this pandemic, no telling what places will stay open in the foodie arena.
