LOL - I was in Denver several years ago - didn't see one obese person - Denver's biking/trail system is absolutely amazing - we think that the Swamp Rabbit is expansive at 17 miles - metro Denver has over 500 miles of paved bike/multi-use trails.
Yes, not only can you get around easily in many towns and cities in Colorado, you can easily tour the whole state on a bike, if your body is able.
If you "love it" in NYC, consider your move very carefully. Greenville is about as different from NYC as two places can be. As you haven't lived in many places other than NYC, I feel the need to emphasize this. The decision is important enough that you might want to take a week vacation off to spend in Greenville, though I'm not sure how long your job offer is good for.
Everything is ridiculously cheaper in Greenville than in NYC. I have never run out of things to do here - but I enjoy stuff like biking, hiking, etc. As others have said, you will absolutely have to have a car to live here.
The people in Greenville are, on average, very different than the people in New York (for better and for worse.) I'll leave it at that.
