Job.wise I.suggest Oahu, ive been told by an HR person that Hawaii is lacking when it comes to finding talent in computers and technology, she said they often recruit on the mainland.
Ive lived here for 6 yrs and now have to move (military). Since you want open spaces I would live on what they call the windward side of the island. It's an easy drive over a mountain into Honolulu and It's country like. They try to limit development there. I would also try Gov jobs since.they are the biggest employer or one of the contracting companirs, do a Google search since I can't remember the names. As for the other islands, jobs are limited unless you get lucky at a resort. Gooduck.
