To me, most pizza in Jersey tastes the same. There are some subtle differences however. For some reason though, New York Pizza is superior to any Jersey pizza I have ever had and when I say NY pizza I mean just about any NY pizza. Supposedly the water is extremely important.

Unless you have lived in NJ/NY you will never know the subtle differences in pizzerias.
Living in Bayonne for 30 years I have had my share of excellent pizza in Bayonne, Jersey City and Hoboken.
Once I moved down to Ocean County I could see the HUGE differences in pizzerias. There is a place in Lacey that makes a decent pie, but their gimmick pies (the pies that have toppings that are not traditional) are the only ones that I will order---baked ziti, buffalo wing or chicken parm pies. Water plays a tremendous role in the pie...as does the dough, the temp of the oven, the crust and how long everything (yes, everything) has been sitting out.
I will still stick to my original comment...the BEST pies are made in NY. Staten Island, Brooklyn and Manhattan have the best pizzerias. If you can find a place that makes brick oven pizza with mozz that is not sliced into hundreds of pieces, but has just several slices of mozz on it, fresh tomatoes (preferably San Marzano) and basil then you have the beginnings of a nice pie. I have to admit that I am still a fan of Ray's on 11th and 6th Ave in the City. Huge slices that need two hands, and either a huge amount of spinach or eggplant on top with another layer of their cheap mozz!
Who is up for a road trip?

Pizza in the northern New Jersey area used to be good or great actually in the '80s. Now, I don't know what happened -- but any pizza place I go to usually just takes plain horrible. So, I venture out to the City for great pizza. If I must eat pizza in northern Jersey -- I'll order Papa John's.
