From Clayton, NM to The Woodlands - what a leap that would be!
The Woodlands Township is a HIGHLY regulated community but the
area surrounding it is vast, with plenty of options that don't require
kowtowing to HOAs, coventants, etc.
Best of luck wherever in Texas you land. You'll love not having to pay state income taxes, but of course Texas has ways of making up for the deficit.
As for the food, I spent MOST of my life eating Tex/Mex so for me New Mex is too bland and has to darned much cilantro! OTOH, I never developed a taste for fajitas.
No state income tax but outrageously high property tax and property insurance, the government will get it one way or the other...
