Those are the symptoms, not causes. I also don't think there's any such thing as a "fair trade" restaurant. That's a food label. Fair trade farm-to-table would be great because it implies that the farmers in surrounding counties are frequently-exploited third world nation dwellers. Wheat subsidies and low taxes in Butler County? Oh, the humanity.

I like Chicken Romano if it's done right. Chicken Marsala, too. I used to eat the latter in NY all the time. Mmmm. I don't know if I've had it in Pgh.

Me too (see Legends of the North Shore). It's pretty much Francese by another name, but so too is the Devonshire to the Hot Brown.

I'm still sad I missed out on the days of the crab Devonshire.

Well, it depends on your definition of "good" as well. We made a conscious choice to spend more on ethically and humanely raised meat, wild caught fish and organic/no spray produce. We eat very little processed food. It is not cheap or easy to eat this way, but it is our choice.

And while I understand that others do not choose to do similarly for a myriad of reasons, I am puzzled that most people don't opt for the cheapest house, clothes, cars or other goods, but believe that food should be cheap.

Sorry, no age exclusionary implication intended. It does seem like the new restaurants really starting popping up after transplants discovered the city, but they are by no means the only ones who eat there.
