I'm just not big on pig, NPG. However, if I'm having pig, I'll go with eastern NC pig since it's traditional in my family for, oh, I dunno, 15-20 generations or so.
Truth be told my favorite NC delicacy is probably a homegrown tomato sandwich. I'm just not a big meat eater.
If you don't care much for meat, that certainly would make enjoying various Q's more difficult, for sure. My favorite Q is sausage, then turkey, then shredded beef, then ribs, then chicken. All cooked the same exact way, over the same seasoned pit. I loves me some variety. Good Lord, now I am hungry.
Yes, Maurice's and Piggie Park are one and the same.
It is disgusting to me. I don't eat mustard or mayo, though, so my view is biased. Mustard is all you can taste with Maurice. He also has brothers who own mustard-based BBQ joints. They are the Bessingers. Emeril named one of them (https://www.melvinsbbq.com/) as the best burger several years ago.
I have been told by NC natives that there is a mustard-based BBQ up here, though the pics seem more muted.
Not liking pork makes enjoying any BBQ difficult. I am not sure I would advise trying any of them, though with the Bessinger's, you don't taste the meat.

Back in the day, it was Bubba's BBQ, somewhere on the outer banks (Maybe near Kittyhawk? IDK, It was like 35+ years ago for me). They were huge Washington Redskins fans. That's just on the good side of where I draw the line for good Que. I won't give a racist (Maurice) my money, but I'll begrudgingly give a Redskin fan money if the que is good enough. (Serious as hell about the first comment, totally tongue in cheek about the second)
I present BBQ chicken with "Alabama white sauce." (Pic courtesy of cookandbemerry.com)
Whatever that is doesn't even qualify in anyway to be called BBQ. It's hard enough for me to handle calling something besides pork BBQ, or calling any meat slathered in ketchupy red sauce BBQ, but there's got to be a line somewhere and white sauce on chicken of all things seems to be a great place. Most of my family is from AL, and I respect the local cuisine there, but this is just an abomination. It might taste great, but BBQ it is not.
I do enjoy some traditional eastern NC BBQ for special occasions, usually catered family gatherings/reunions, etc. And I have vivid memories of going through the line at real pig pickin's, and grabbing me some pig meat right off the carcass.
As for seafood restaurants in Raleigh, that's not my neck of the woods, so I'll have to let someone else answer. In Chapel Hill Squid's serves some local seafood and I believe Capt John's Dockside does, too, but I haven't been there since I took my mom there several years ago. If I eat seafood out it's usually at the beach or just on the menu at a regular local restaurant. The kids are not overly fond of it, so we're more likely to go somewhere that has something for everyone and I might order the shrimp, scallops, local NC fish tacos, etc.
dannys and city bbq both have sauce with heat. Danny's brisket holds together and city bbq falls apart. Chili should have beans and I make my own at home so I dunno where to get it out and about. City BBQ also has great smoked turkey if you wanna try something different.
Danny's is absolutely nothing like the quality Q one can get in Texas. I tried them multiple times and was disappointed each time. However, as with all things, YMMV.
I tried City BBQ once. Is that really Carolina (of any variety) BBQ? Someone told me there were from further west.
They're from Ohio.
