Having said that, I think a lot of other Asian food in the US, especially Japanese, is more bougie than a lot of Chinese restaurants so more of an 'experience', which may factor into the ratings. I remember some of the restaurant-y Chinese restaurants I went to years as a kid or teenager that I really liked, very clean, polite service, white tablecloth, etc. but that is very much the exception. If there are any of these around here I'd like to go.

I think if you're not in China, it isn't Chinese food. Everything here is too Americanized.
There are some traditional meals to be had. China is an enormous country, and I imagine some of the cuisine is regional. But the traditional menu at Nice Bowls is definitely not geared toward Americans. For example: )

My point is that even people from China might say a restaurant’s food isn’t “right” because it’s from a different region. I’m married to an immigrant who never likes restaurant food from his country (traditional items) because of regional variations.
Is bitter cucumber the same as bitter melon? It does look like a cucumber.
According to my google it is the same thing. It may also be called bitter gourd.
