Recipes.com seems to have let me down. I am looking for a recipe for flavored cream cheese, specifically cinnamon/raisin/walnut like the one available in bagel shops. Does anybody have one to share? I'm thinking there must be another ingredient, because the raisins alone wouldn't be enough to sweeten it.
I would guess imitation walnut extract? My dad used in making candy/cookies all the time. Although I don't know if McCormick still makes it, it should still be available online or in specialty stores. http://farm4.static.flickr.com/3286/...e2f1da7b_o.jpg
I don't know what they give you in bagel shops, but for cinnamon raisin cream cheese, I would soften the cream cheese (whip it in the mixer) and then fold in cinnamon sugar, finely chopped walnuts, and raisins. Maybe the raisins should be chopped, too, or the cheese will be lumpy.
All of that would be to your taste. I mix cinnamon sugar for toast with heavy on the sugar and light on the cinnamon. Maybe you like more cinnamon. The nuts and raisins would depend entirely upon how many you like.
