I want to make Eggplant Parmesan for dinner tomorrow night. Can I make the whole dish today, refrigerate it overnight, and then cook it tomorrow.

Wondering if it will get soggy or ?????

Delicious.
Here is my recipe for lasagna. Noodles, Mozzarella cheese, Ricotta cheese, Chicken, Spinach, Mozzarella again, layer. Should layer twice. Add parmesan on top. No sauce. Enjoy.

Doesn't the eggplant turn brown after being sliced up, if not cooked right away? Too late now, but in this situation I would lightly pan fry the eggplant before putting it together.
