Me and my girl have been together for 3 years but when we argue she tells me to 'man up', i really hate that phrase but what I am I doing wrong?..

Man up typically means the guy is acting like a child or a pansy. Stop doing that.

Namely the latter. She's shouting at him and seeing that it makes him uneasy or uncomfortable. Getting angry or pissed. OK Going into the fetal crouch and NOT OK!

"Man up" is term that women use to make you feel inadequate when you're doing something that they don't like.

In any case, it's completely inappropriate for a woman to call out a man and use that term unless she's talking to her SON.

Bottom line, tell your girl to stop using the phrase. If she continues then dump her.

Tell her you hate that phrase, and in the future you'd like her to be specifically communicate what she would like you to think about changing. This would be better than bashing. It sounds like a symptom of a deeper problem she has with your relationship, or maybe you're with a female jerk?
