I made this tonight:

Food and Recipes: Olive, Garlic and Lemon Chicken - Paleo Recipe

Only I used 4 cloves of garlic, a few shallots and tossed in some artichoke hearts as well. Had basmati rice and steamed green beans with it. It wasn't half bad.

We're making an incredibly evil, decadent version tonight. I don't normally have guilt about food, but I have to make sure I really crave this one before we make it, lol. Butter, cream, parm.... Pasta is cooked in the sauce... Omg...

Exactly what I made but I only use real butter and real cream in recipes or for toast or my coffee.
None of that fake tasteless stuff for me but I do have to watch what I give Mr. CSD.
I can give him pasta with no issue usually with his diabetes but he has been pretty lazy the last few days.
I may have to badger him to get on the treadmill for 20 minutes or so.

Chow's typing a post about the pasta, but does Mr. CSD test at home?

Since the Mr. is diabetic, you really should look into a product call Dreamsfield pasta. It's a pasta that diabetics can eat cause it doesn't cause the blood sugar spike that traditional pasta does.

Look into it, it's really good we eat it all the time. We're not diabetics, but I still try and watch the carbs......

He tests at home when I ask him to but he is not real good about it when he is not home or if I don't ask.
I get quite frustrated with him over this whole issue and it makes him cranky but he gets over it and complies and we move on and I feed him accordingly.
