Why did you post a youtube clip of an Italian olive harvest , as proof that olives can grow in the UK?
Now are you seriously trying to tell me that the UK is too hot in the Summer to grow olives! lol
They don't even average a kilo a tree ... in the years that they do crop. I have followed this for a while, and know what years that produced fruit - three years since 2014.

Here, there must be some serious drainage issues for the olive trees in NZ! They like a well drained soil and with rainfall at around an incredible 1210 mm a year in Auckland you'd expect them to be half submerged!
They don't even average a kilo a tree ... in the years that they do crop. I have followed this for a while, and know what years that produced fruit - three years since 2014.

My climate sees around 1400mm a year and has plenty of olive orchards.
Had about 250mm here last week, and the ground is quite dry - remember that unlike your climate, the amount of daily sunshine by percent in my climate is pretty constant ... that has a huge bearing on ground conditions.
Olive trees are as tough as old boots - you wouldn't want to plant them in a swamp, but they can handle regular damp ground very easily.
