my lunch today is red pepper hummus, brocco sprouts, dijon mustard and fresh basil on toasted whole wheat. i like cucumber as well but it soggs the bread by lunch time.

dont try fresh basil on a sandwich. it wasnt the greatest.........

Speak for yourself! I adore fresh basil on a sandwich, instead of or along with lettuce. It's especially lovely if there is goat cheese involved. I could eat goat cheese, tomato, and basil sandwiches every day in summer.

I am not much of a sandwich person, but nothing beats a nice bean burrito or rice wrap. Which you must admit is just a sandwich with a foreign accent.

ive only recently gotten into fresh basil. my daughter discovered a recipe for inside out margahrita pizza, amazing! but cold basil doesnt taste quite the same as cooked basil. i guess i need to try basil on a sandwich again......

I wasn't vegetarian when I first had a falafel sandwich and it is one of my favorites. Now I learned how to make falafel as well as buying the box mix which is good. Some places even sell them in frozen foods dept. I like them on a pita, with lettuce, tomatoes and cucumbers with Tzatziki sauce, mmmmm!!!!! I am 80% vegetarian now so I went back to this sandwich.

I made a great tofu salad recently, along the same lines as an egg salad, replacing the egg with medium firm tofu.

I also like TVP mixed with BBQ sauce, or other, and spooned onto a bun like a sloppy joe.

Mostly I eat stir frys, sauteed in spray olive oil, or just chopped veggies with a touch of protein microwaved in their own juices, with companion spices.
