Dang, I just finished eating dinner, and you'all are making me hungry.

I love a salmon wrap, but don't have the recipe handy. I think it had goat cheese, tomato, sprouts, cucumber, some canned salmon with a touch of smoke flavor added. Wraps are fabulous. I can't get peta bread to hold together.
My mother used to make me diced black olive sandwiches with mayo and lettuce, still a favorite.
I also love the fake bacon used for a BLT, that stuff is really good, easy does it, don't burn it.

tofu sandwich with avocado, tomato, and onion. cut tofu into slices, marinade with sriacha hot sauce mixed with a bit of olive oil and spices, and bake around 375 - 400 until desired doneness.
also grilled cheese/daiya paninis, spread hummus on below the cheese, also with tomato and onion.

My favorite are the falafel wraps from middle eastern restaurants. Those are like an addiction and you can make them at home too!

If you are looking for a quick, cheap bite for lunch at work or in school then there's always a veggie sub at Subways.

I'm not a peanut butter fan as I am much more of an almond butter junkie.
