Will be on the road tonight, but premade vegetarian style gyros (will store in a cooler) with thick pitas, strips of roasted tempeh, raw tomato, spinach, and Greek yogurt. Included spices such as rosemary, garlic, black pepper, oregano in it. Carrot fries on the side, and fresh peaches.
Moroccan spiced cabbage rolls. I think I will stuff it with quinoa and lentils. I only have red cabbage so it will be a first for this use.
Maybe a side of sauteed red peppers.

Home made grilled smoky black bean burgers served on potato buns, topped with melted pepper jack cheese, pickled jalapeno slices and spicy corn relish.
Spaghetti with red lentil/tomato/vegetable sauce (zucchini, green pepper, mushrooms, onion) and vegan parmesan (blended blanched almonds, nutritional yeast, pinch of lime juice, garlic powder); cashew milk to drink
The cabbage rolls were the bomb! I did the red bells with harissa and yogurt.

Making one of my favorite dishes: sauteed savoy cabbage, chopped apple, sauerkraut, red potatoes, and Field Roast Apple Sage vegan sausage (also soy free for those interested, but NOT gluten free). Here is a pic of a previous one I made.
