And not every white person has to look the same, though ( some said they don't exactly look the same as white folks ) because here, in the U.S., black can mean all kinds of shades and colors... some are really dark black, some are brown and light skinned ( probably mixed or have something else in them ), but they are often still simply called "black".

No. Because even if many of them are on "lighter" side as far as skin color goes, their features are not European. ( VERY FEW Middle-Easterners have both - lighter skin and European features if any.) To me White = European features, not skin color only.

Many Southern Europeans can pass for middle eastern people. European features on white Europeans vary as well.
Not "many" - some.
And only *some* Middle Easterners can pass for Europeans.
In my experiences yes esp from countries such as Lebanon, Southern Italy and Greece esp Greek Cypriots. Yet with Lebanon the people there in general are lighter than in the gulf countries and Egypt but its not always the case.
Turkish people are considered Middle Eastern and I have mistaken many of its men for Southern European. But women easier as so many have the hijab. Also parts of Turkey used to be of regions of Greek settlements so that may explain it as probably huge numbers of Greeks did assimiliate into Turkish socieity.
What "Caucasians" are you talking about? You mean people who live in Caucasian Mountains or what?
Is this an actual question?
