The facility was in the process of correcting a clogged sink and is replacing dish machine.

Products in the main kitchen were also discarded that were beyond the allowed 7 day hold time.
I recommend making a temperature log part of your daily procedure. Please check temperatures multiple times a day. Also ensure products are properly date marked and rotated when necessary.

Products in the restaurant kitchen downstairs were at appropriate temperatures and were date makred as required.

The 3 compartment sink was still leaking, however, maintenance has received the part required to make the repair.
