Cross-contamination of Raw/cooked foods/Other "Properly store all raw animal PHFs below all pre-cooked and ready-to-eat foods (RTE), and other raw animal PHFs, according to their respective cooking temperatures, in all cooling units to prevent cross-contamination of PHFs. Observed raw chicken and raw shrimp stored above several containers of whole carrots in the walk-in cooler. All foods were reorganized so that they are correctly stored. "
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized "Avoid storing grocery bags filled ice directly on top of the raw chicken in the prep coolers to keep it cool. Ice can be stored directly on the raw chicken. Grocery bags may harbor harmful bacteria that can contaminate the raw chicken. Observed raw chicken held at 31*F in the prep cooler. As long as cold PHFs are held at 41*F and below, they are at safe temperature."
