Approved Systems (HACCP Plans/Time as Public Health Control) Date mark cooked/ prepared/ opened packages of commercially processed ready to eat potentially hazardous food items being stored over 24 hours ensuring not to exceed a 7 day shelf life (prep date is day 1) to prevent illness. Observed cooked pork prepared on 7/17/15 ( 2 lbs.) and package of commercially processed cheese opened on 7/25/15 in prep cooler. Cooked pork ( 2 lbs.) was discarded and opened package of cheese was adequately date marked as a corrective action.

Observed chlorine sanitizer solution at 0 ppm in buckets ( 2) in drink prep area and kitchen. Chlorine sanitizer solution was restored to 50/ 200 ppm as a corrective action.
