Cold Hold (41 F/45F) "Repair the cook's prep cooler to hold potentially hazardous food at 41F or lower. Observed internal temperature of past at 45F and cut tomatoes at 47.8F. Cheese and pasta were observed on top of containers and overstacked out of the cooling area and observed at 50F. Do not stack food over the limit line of the pan. Also observed the door of the cooler not able to close. The foods were removed, put into a working unit and the unit was red tagged. All food was recently put into the cooler according to the owner. "
