Observed at least 5 unlidded employee beverages over clean ware on shelf next to bulk dry storage containers. General Manager discarded employee beverages as a corrective action.
Handwashing Facilities With Soap and Towels Provide paper towels at all hand wash sinks to ensure proper hand washing. Observed no paper towels at hand wash sink next to 3 compartment sink. Paper towels provided as a corrective action.
Manual/Mechanical Warewashing and Sanitizing Maintain quaternary sanitizer solution between 150- 400 ppm to ensure proper sanitization. Observed quaternary sanitizer solution at less than 150 ppm in 2 buckets under hot holding steam table and one bucket under sales counter. Quaternary sanitizer solution restored to an adequate strength as a corrective action.
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized "Wash, rinse and sanitize food contact surfaces removing food residue to prevent food product contamination. Observed one food container and one food pan with food residue on the interior surfaces ( food contact surface) on clean ware shelf. Food contact surfaces were removed from use to effectively be washed, rinsed and sanitized in the 3 compartment sink. "
