Proper Cooling to Cooked/Prepared Foods A big batch of beans was out cooling on the table in a deep container therefore not allowing rapid cooling. When cooling large amounts of food break it down into shallow pans to facilitate the proper cooling. The beans had just been cooked so they were broken down into smaller containers.
Handwashing Facilities Adequate and Accessible The hand sink in the deli and the back ice machine room was not accessible because they had items stored in them. keep hand sinks accessible at all times for proper hand washing. The items were removed.
