| Cold Hold (41 F/45F) Observed cream cheese being held at 59 degrees and butter being held at 65 degrees in the serving line for less than 2 hours . All potentially hazardous food (PHF) should be held at 41 degrees or lower when kept cool in order to prevent foodborne illness. COS; The cream cheese and butter were placed in the reach in cooler on the serving line in order to reduce the temperature. To leave PHF out at room temperature provide a written time log and procedure for holding these items including when the items will be discarded. (Same if hot hold food is not held at 135F or higher and discarded) |
| Handwashing Facilities Adequate and Accessible Observed dishes stored in employee designated hand sink which. Ensure all hand sinks are only used for hand washing and not for storage or ware washing and keep accessible for hand washing at all times. Instructed the employee to clear the far right sink and designate it as the hand wash sink and move the soap dispenser and hand wash sign. |
| Toxic Items Properly Labeled/Stored/Used Observed a container of sanitizing wipes stored in a kitchen cabinet along with soda cans. Ensure all toxic chemicals are stored away from food items in order to prevent contamination. The container of sanitizing wipes was then moved to another cabinet away from food items. |
| Manual/Mechanical Warewashing and Sanitizing Use Quat sanitizer at required strength of 200 - 400ppm to ensure proper sanitization of food equipment. Observed Quat sanitizer in use below 100ppm. Employee stated she adds water. COS; employee was instructed not to add water and sanitizer was remade to reach 200ppm. Test daily. |

Provide a consumer advisory to the buffet area instructing patrons to use a new clean dish for every pass on the serving line and ensure it is posted in a conspicuous location. Provided a sign for management to use as an advisory. |
| Food Establishment Permit "Observed a permit posted with incorrect ownership information and observed operating the breakfast service without a permit. When asked, management stated that the establishment changed ownership in November 2014. HCPHES was not notified of this change in ownership therefore the previous permit is not valid - permits are not transferrable. Provide a valid permit to operate a food establishment in Harris county. Instructed management to call HCPHES and ask to speak to pre-opening. An application a plan review is required. " |
