Observed three bottles of lighter fluid stored on rack directly above prep table holding raw chicken. Use chlorine chemical sanitizer at concentrations of 50-100PPM to prevent contamination. Observed bucket of sanitizing solution on MFU with 200+PPM concentration. Management was instructed on adequate usage/preparation." |

Provide thermometers on all cold holding and hot holding equipment containing potentially hazardous foods to adequately monitor equipment temperatures. Observed no thermometer in reach in cooler in strip center business (Henry's Place Africa's Gifts). Observed no thermometer in reach in cooler on MFU. |
