If only the owner is certified and does not work at the unit then a shift employee needs to get certified as well. An employee showed up during the inspection with a food manager certification.
"Approved Sewage/Wastewater Disposal System, Proper Disposal" A commissary receipt is not present. The mobile unit shall visit an approved commissary 24 hours prior to opening for proper waste water disposal.
Thermometers Provided/Accurate/Properly Calibrated (2C) A high temperature thermometer is the only thermometer present to take temperatures. A thin tip thermometer shall be present to take internal temperatures of cold and hot foods.
