Cross-contamination of Raw/cooked foods/Other "Food shall be protected from cross-contamination by separating raw animal foods during storage, preparation, holding, and display from raw ready-to-eat food, including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as vegetables, and cooked ready-to-eat food. Observed raw eggs stored above produce in the reach-in cooler. Eggs were moved to bottom shelving."
Approved Systems (HACCP Plans/Time as Public Health Control) "Refrigerated, ready-to-eat, potentially hazardous food prepared and held in a food establishment for more than 24 hours shall be clearly marked using calendar dates, days of the week, or other effective means to indicate the date or day by which the food shall be consumed, sold, or discarded. The day of preparation shall be counted as Day 1. Observed cheese with a prep date of 9/4/15 in the reach-in cooler. Cheese was discarded on-site."
