Hot Hold (135F) Hold hot foods at 135F or higher. Observed corn at 123F and green beans at 113F on the To-Go steam table. Pans were not large enough to cover steam well and heat was escaping the steam table. Items were reheated and larger pans used to correct the violation.
Cross-contamination of Raw/cooked foods/Other Store the ready to eat food above the raw meat in the cook's tall reach-in cooler to prevent contamination. Raw beef was observed behind the ready to eat cole slaw in a tight cooler - meat could drip on slaw when reaching in to bring the meat out.
Toxic Items Properly Labeled/Stored/Used Store all chemicals away from and below food and prep areas. Observed a chemical over the hand sink in the back room and with foods and another spray bottle with foods in the cooking area.
