Approved Systems (HACCP Plans/Time as Public Health Control) "Observed empanadas containing pumpkin and sweet potato and cupcakes with ream cream icing that are held with time as a public health control that were not marked to indicate a 4 hr maximum hold time- potentially hazardous foods held using time as public health control shall be marked to indicate time by which food items should be sold or discarded not to exceed 4 hrs.- please review template given during pre-opening. Est. must also have written procedure listing all items to be held in this manner, describe the method of marking, and method of destruction."
Thermometers Provided/Accurate/Properly Calibrated (2C) Observed reach-in refrigeration units containing potentially hazardous foods such as eggs and milk did not have a thermometer present for air temperature monitoring. All holding units design to contain a thermometer must have one present and it must be in conspicuous location.
Good Repair Observed several plastic jugs that had been cut and converted in bulk food scoops causing surfaces that can not be easily cleaned and that are cracked or frayed - all food contact surfaces must be in good repair and constructed of suitable materials. Est. removed all homemade scoops and will purchase approved utensils.
